Ingredients for Matar kulcha-desi sandwich Recipe

  • 1/2 cup - safed matar overnight soked
  • 25 nos - gm imli
  • 1/2 packet - Kulche ka
  • 2 spoon - bigoil
  • 125 nos - gm paneer
  • 50 nos - gm dhaniya
  • 0-1/2 nos - lehsun ki kali
  • As required - ½ inch adrak
  • As required - ½ tsp jeera
  • 1/2 nos - small Shimla mirch fine chopped
  • 2 nos - medium onion fine chopped
  • 1 nos - medium onion laccha
  • 1 nos - tomato laccha
  • 3 nos - hari mirch
  • As required - Sale to taste
  • 1 tsp - adrak lensun paste
  • 1.25 tsp - Bhuna jeera powder
  • 1/2 tsp - chat masala
  • As required Degi mirch powder
  • As required Bhuna dhaniya powder
  • 1/2 nos - lal mirch powder
  • 3/4 tsp - normal dhaniya powder
  • As required - Butter
  • As required tomato sauce according to usage
  • 0-1/2 nos - Lemon juice lemon ka

Directions: Matar Kulcha-desi Sandwich Recipe

  • STEP 1.1. Sabse pehle matar me namak dal ke slow flame me 7-8 siti tak cooker me ubalna hai. Matar:water = 1:2.5
  • STEP 2.2. Iske baad Imli ki khatti chutni banana hai, iske liye imli ko 1 bada cup pani ke sath boil karna hai 5-10 mins. Thanda karke pulp nikalke chaan lena hai, uske bad pulp ko ek bada cup pani ke sath again boil karne rakhna hai. Iske salt, ½ tsp lal mirch, bhuna jeera, dhaniya powder add karna hai. 5 mins boil karna hai, khatti chutni taiyar hai.
  • STEP 3.3. Hari chutni ke liye mixer me dhaniya, lehsun, jeera, namak, 2 hari mirch, lemon juice dal ke grind karna hai, jyada thick hone par pani add karna hai, chutni patli nahi honi chaiye, medium rakhni hai.
  • STEP 4.4. Paneer ki stuffing ke liye, ek kadhai me 2 big spoon oil add karke usme 1tsp adrak lehsun paste add karna hai, uske bad 2 hari mirch and fine chopped pyaj add karna hai, 2 min saute karne ke bad, 1tsp dhaniya, 0.3 tsp lal mirch powder, salt add karke 1 min saute karna hai, uske bad grated paneet add karna hai, after 1 min saute, Shimla mirch add karna hai, then thoda hara dhaniya add kar 1 min bad gas band kar denge, taki Shimla mirch crunchy rahe aur paneer pani na loose kare.
  • STEP 5.5. Matar banana ke liye kadhai me 2 bade spoon oil add karna hai, adrak lehsun ka paste add karna hai, barik kati mirch add karke laccha pyaj add karna hai, 2-3 min ke bad laccha tomato add karna hai, salt add karne ke bad, degi mirch, dhaniya powder salt add karna hai then acche se mix karne ke bad matar add karna hai. Iske bad imli ki chutni add karna hai -4tsp. slowly mix karne ke bad sookhe maslae – bhuna jeera, bhuna dhaniya, chaat masala add karna hai, aur dhaniya se garnish karke flame band kar denna hai.
  • STEP 6.6. Kulcha prepare karne ke liye ek kulche pe green aur doosre pe tomato sauce lagana hai, aur dono ke sauce wale side ke bich me paneer ki filling spread karni hai aur tawe par butter ke sath dono side sekna hai. Kulcha is ready
  • STEP 7.7. Serving ke liye kulche ko 4 pcs me kaat ke matar ke sath serve karein.
