  • 0.19 nos cup.wheat flour
  • 1/2 tsp semolina / Rava / Sooji
  • As required salt to taste
  • 3/4 tbsp oil / ghee
  • As required Water to knead to dough
  • As required Oil for deep frying
  • As required For Kachori Stuffing:
  • 1/4 cup peas / matar (fresh / frozen)
  • 1/2 tsp Oil
  • 1/4 inch ginger /
  • 1/4 nos green chilli
  • As required ½ tsp cumin seeds / jeera
  • As required ¼ tsp turmeric
  • As required salt to taste
  • As required ½ tsp kashmiri red chili powder / lal mirch powder
  • As required ½ tsp coriander powder .
  • As required pinch of hing / asafoetida
  • As required ¼ tsp Garam Masala powder
  • As required ¼ tsp aamchur powder / dry mango powder
  • 1/2 tbsp coriander leaves (finely chopped)
  • As required ¼ tsp fennel / saunf (crushed)

  • STEP 3. 1/4 cup maida
  • STEP 4.3/4cup.wheat flour
  • STEP 5.2 tsp semolina / rava / sooji
  • STEP 6.salt to taste
  • STEP 7.3 tbsp oil / ghee
  • STEP 8.water to knead to dough
  • STEP 9.oil for deep frying
  • STEP 10.for kachori stuffing:
  • STEP 11.1 cup peas / matar (fresh / frozen)
  • STEP 12.2 tsp oil
  • STEP 13.1 inch ginger /
  • STEP 14.1 green chilli
  • STEP 15.½ tsp cumin seeds / jeera
  • STEP 16.¼ tsp turmeric
  • STEP 17.salt to taste
  • STEP 18.½ tsp kashmiri red chili powder / lal mirch powder
  • STEP 19.½ tsp coriander powder .
  • STEP 20.pinch of hing / asafoetida
  • STEP 21.¼ tsp garam masala powder
  • STEP 22.¼ tsp aamchur powder / dry mango powder
  • STEP 23.2 tbsp coriander leaves (finely chopped)
  • STEP 24.¼ tsp fennel / saunf (crushed)
  • STEP 25.firstly, in a small blender take peas, ginger and chilli.
  • STEP 26.blend to coarse paste without. keep aside.
  • STEP 27.further, in a large kadai heat oil.
  • STEP 28.add in cumin seeds and saute till they turn aromatic.
  • STEP 29.also add in spices and saute.
  • STEP 30.further add blended peas and saute.
  • STEP 31.also add salt and coriander leaves. mix and keep aside.
  • STEP 32.kachori dough recipe:
  • STEP 33.firstly, in a large mixing bowl add maida, atta , rava and oil and salt.
  • STEP 34.crumble the flour well with oil.
  • STEP 35.in addition, add water and knead to form a dough. rest for 15 mins.
  • STEP 36.now pinch a ball sized ball and flatten it.
  • STEP 37.scoop prepared matar stuffing.
  • STEP 38.get the edges together and form a bundle.
  • STEP 39.deep fry kachoris to golden brown.
  • STEP 40.finally, serve matar kachori with your choice of chutneys.
