Ingredients for Masala Uttapam Recipe

  • 1/2 Cups ( 3 Cup rice 1 cup urad dal )dosa batter
  • As Required water
  • As Required Oil
  • To Taste salt as per taste
  • 1/4 Pieces Finely chopped onion
  • 1/4 Pieces Chopped tomato
  • 0.13 Pieces Capsicum Finely chopped
  • 1/2 g reen chillies finely chopped
  • sprig A sprig of coriander finely chopped
  • as required Jeeraman -as required
  • as required Coconut chutney
  • as required Tomato ketchup
  • as required Tomato peanut chutney
  • As Required tamarind chutney required

Directions: Masala Uttapam Recipe

  • STEP 1.Add salt to your Idli Dosa Batter and mix well.Add water to the batter to make pancake-batter-like consistency and add salt to taste.
  • STEP 2.Put all the vegetables in the bowel for your toppings. Mix well green chilli, coriander leaves. Mix salt.
  • STEP 3.Heat a tawa on medium heat. Once the surface is hot, pour a ladleful of batter onto the pan and spread it evenly in circular motions. Since this batter is thick, take care not to spread it too much.
  • STEP 4.Do not spread the batter too much, the uttapam has to be thick. If the batter does not spread on its own, you can spread it lightly.
  • STEP 5.Lower the flame.
  • STEP 6.Sprinkle toppings as desired. Pour a generous amount of the vegetable mixture over the batter and spread evenly. Don't forget to lightly tap the vegetables in the uttapam. Spread onions, tomatoes, green chillies and capsicum on the uttapam.
  • STEP 7.To make the uttapam thick, cover and cook on low flame so that the batter gets cooked.
  • STEP 8.Pour oil or ghee around the edges and let it cook on low to medium flame till the base gets cooked well and becomes hard. Lower the flame.
  • STEP 9.And the edges will start to turn golden brown. The top batter will also start getting slightly dry/cookedLet cook for 2 minutes or until golden on the bottom.
  • STEP 10.Flip the uttapam carefully and cook from the other side on a low flame for 1-2 minutes or till the vegetables turn light brown in color.
  • STEP 11.Let the upper part cook for 1 to 2 minutes as the onions begin to caramelize.
  • STEP 12.Repeat with the remaining batter, pouring enough oil or ghee on the sides of the uttapam for easy flipping. And cover the pan with a lid. Let the uttapam cook for a few minutes. You will know it is ready when the edges turn light brown.
  • STEP 13.Finally take out the hot uttapam and serve with topping side garnished with butter or coconut chutney/tamarind chutney/tomato peanut chutney, sambar and cumin.
  • STEP 14.Delicious uttapam is ready to eat!!

  • STEP 16.to make Uttapam Crunchy and Fluffy Uttapam
  • STEP 17.Always make the batter at home from the thick side. This ensures a multipurpose batter for making idli, dosa, uttapam, appe or dhokla. You need a thick consistency of batter to make uttapam. Slightly thicker than dosa batter and thinner than idli. So add water accordingly.
  • STEP 18.Make sure the tawa is heated on medium heat and not on high flame, else the uttapam will start to brown before it is cooked from inside.
  • STEP 19.Do not add more topping as it can make the uttapam soft.
  • STEP 20.Cook the uttapam from both the sides to ensure crispy result.
