  • 1 cup Rice
  • 1/4 cup Urad Dal
  • 1/4 teaspoon Fenugreek Seeds
  • As required Salt To Taste
  • 1 cup Potato Masala
  • 1 Onion, Finely Chopped
  • 1 Tomato, Finely Chopped
  • 2 Green Chilies, Finely Chopped
  • 2 tablespoon Coriander Leaves, Chopped

Cooking Directions

  • STEP 1.To make the batter, soak rice and lentils overnight, then grind them into a smooth paste.
  • STEP 2.Ferment the batter for 8-10 hours or overnight.
  • STEP 3.Heat a non-stick pan and pour a ladleful of batter onto it. Spread it in a circular motion to form a thick pancake.
  • STEP 4.Sprinkle chopped onions, tomatoes, green chilies, and coriander leaves on top.
  • STEP 5.Drizzle some oil around the edges and cook on medium heat until the bottom turns golden brown.
  • STEP 6.Flip the uttapam and cook the other side until it is cooked through.
  • STEP 7.Serve hot with coconut chutney and sambar.

Cooking Tips

  • You can add grated carrots, capsicum, or any other vegetables of your choice as toppings.
  • Make sure the pan is hot enough before pouring the batter to get a crispy texture.
  • You can adjust the spiciness by adding more or fewer green chilies.
  • If the batter is too thick, add a little water to get the right consistency.

Storage and Serving

  • Masala Uttapam is best served hot and fresh.
  • Leftover uttapam can be stored in an airtight container in the refrigerator for 1-2 days.
