Masala baingan is a popular maharashtrian dish made with small brinjals. Dry masala is stuffed in it then shellow fry them. Here i made it with mint tomato gravy.
Ingredients for Masala Baingan In Mint Tomato Gravy Recipe
as required Brinjal
as required Salt
1/4 teaspoon red chilly powder
As Required Corriander powder
1/2 teaspoon Garam masala
1/2 teaspoon Turmeric powder
1/2 teaspoon Dry mango powder
1/2 teaspoon Dry mint powder
as required Oil as required
as required Onion
as required ibger as required
as required arlic cloves as required
as required Tomato
as required Corriander leaves
Directions: Masala Baingan In Mint Tomato Gravy Recipe
STEP 1.Wash, clean and dry the brinjals.
STEP 2.Slit each brinjal lengthwise.
STEP 3.Mix all dry spices in a bowl.
STEP 4.Stuff this mixture in to the slit brinjals.
STEP 5.Heat oil in a kadai.
STEP 6.Add the brinjals gently.
STEP 7.Softly stir them and cook on low flame for ten to fifteen minutes.
STEP 8.Drain out in a plate.
STEP 9.FOR CURRY: -
STEP 10.Heat two table spoon oil in a pan.
STEP 11.Add onions, ginger and garlic in it. Soute it till they become golden.
STEP 12.Add tomatoes and green chillies in it. Soute it for five minutes.
STEP 13.Switch off the flame. Let the mixture cool down.
STEP 14.Grind it with mint and corriander leaves in a smooth paste.
STEP 15.Heat oil in a pan.
STEP 16.Add paste in it and saute them till oil separates.
STEP 17.Add salt and dry spices in it. Mix properly.
STEP 18.Now add fried brinjals in it. Mix gently.
STEP 19.Cook for two minutes.
STEP 20.It's ready. Serve with naan or chapati.
