Marwari Kadhi is popularly known as 'Rajasthani Kadhi'. It is prepared with sour curd, besan, and traditional Rajasthani spices, this is a main course dish full of spicy and delicious flavours which can be enjoyed with parathas, chapati and rice.
STEP 1.Take a bowl and sieve the gram flour properly into it.

STEP 2.Add one cup of curd to the gram flour and put turmeric, red chilli powder and salt to it.

STEP 3.Mix it well using a whisk and make sure that no lumps are formed.

STEP 4.Add one litre of water to this mixture, make sure that you add the water in batches and not all at once in order to mix it evenly.

STEP 5.For tadka take a pan and add 2 tsp of ghee to it and reduce the flame to medium.

STEP 6.Add hing and mustard seeds to the pan.

STEP 7.When the mustard seeds start popping add cumin seeds, black pepper, cloves, fenugreek seeds, cinnamon stick, cardamom and bay leaves.

STEP 8.When cumin seeds get cooked add chopped green chillies, curry leaves and ginger.

STEP 9.Add the gram flour and curd mixture into the pan and stir it well so that no lumps are formed and let it cook for 30 minutes.

STEP 10.Take the pan off the flame.

STEP 11.On a separate pan take 2 tsp of ghee and put some jeera, red chilli powder and dry red chilly into hot ghee.

STEP 12.Turn the flame off and pour this tadka on top of the prepared kadhi.

STEP 1.Finally add some crushed mint leaves and garnish it with coriander leaves. Your marwadi kadhi is ready to serve.
