1/2 tablespoon fermented dou chi and fermented soya beans
1/2 teaspoon Salt
1/2 tablespoon Sichuan pepper
1 tablespoon light soy sauce
1 cup Water or broth for braising
2 tablespoon cooking oil
2 No.s scallion whites
4 No.s garlic greens or scallion greens
2 No.s garlic cloves
5 No.s ginger slices
1 teaspoon Sugar
2.50 tablespoon Water
1 tablespoon Cornstarch
Directions: Mapo Tofu Recipe
step 1
STEP 1.Add a pinch of salt and sesame oil to minced beef. Mix well and set aside.

STEP 1.Mix 1 tablespoon of cornstarch with 2.5 tablespoons of water in a bowl to make water starch.

STEP 2.S cut tofu into square cubes.

STEP 3.Bring water to a boil and then add a pinch of salt. Add the tofu in and cook for 1 minute. Now drain.

STEP 4.In a pan, heat 2 tablespoons of oil, fry the minced meat until crispy. Transfer out beef out and leave the oil in.

STEP 5.Fry doubanjiang for 1 minute and then add garlic, scallion white, ginger and fermented black beans to cook for 30 seconds until aroma.

STEP 6.Add water to the seasonings and bring to boil. Add the tofu cubes. Add light soy sauce and beef. Then add chopped garlic greens.

STEP 7.Stir the water starch and then pour half of the mixture into it. Wait for around 30 seconds and then pour the other half.

STEP 8.Transfer out when almost all the seasonings stick to tofu cubes. Sprinkle szechuan peppercorn powder.

STEP 9.Serve immediately with steamed rice.
