Mango rabri is a very delicious and seasonal deasertade with milk and mangoes. here i have serve this dessert in tarts which give it a fusion and international twist to the recipe. do try this summer.
STEP 1.For mango rabri, Boil the milk in wide open heavy bottom pan
STEP 2.Lower the flame and simmer it for around 60 mins till it reduces to 1/3 of it
STEP 3.Keep stirring in between so that it don’t get stick at the bottom of the pan.
STEP 4.Once done add cardamom powder and sugar, mix it well until sugar get dissolved
STEP 5.Turn off the flame and add chopped nuts and wait till it’s get completely cooled.
STEP 6.Once it’s get cooled add 1 and 1/2 cup of mango purée and mix it well
STEP 7.Garnish with almonds and pistachios
STEP 8.Mango rabri is ready, put it into the freeze for couple of hours and chill it.
STEP 9.For making tarts, Beat sugar and butter with hand mixer till fluffy
STEP 10.Add egg yolk and beat again for a minute.
STEP 11.Then swift the flour in and mix well with hands
STEP 12.Give it a shape of ball and cover it with cling film and let it refrigerate for an hour time.
STEP 13.Take one muffin tin grease the each cup inside with the softened butter
STEP 14.Now remove the dough from the fridge and divide in equal seven portions
STEP 15.Press each portion into the cups making the thickness as equal as possible
STEP 16.It should come little over half way upside
STEP 17.Pierce the bottom with fork.
STEP 18.Bake the tarts in a preheated oven on 175 c for 12 mins.Once done cool it completely and take the tarts out.Remove the mango Rabri from the freeze and assemble the chilled mango rabri in tarts.
STEP 19.Serve these mango rabri tarts with your choicest dry fruits and garnish with mint leaves. It makes a perfect fusion recipe combinations to western dessert.
