Rajasthani Rabdi Malpua is a sinful dessert, . A traditional, light sweet which you may call as the Indian pancake. Malpuas are soft and fluffy, coated in sugar syrup and served with delicious Rabri over it. Malpua is served with a serving of Rabdi on top garnished with nuts. Ingredients for Mango Malpua With Mango Rabdi Recipe

  • 1/4 cup maida
  • 0.06 cup Semolina
  • 1/4 cup Ripe mango pulp
  • A Pinch pinch of salt
  • 0.38 cup Milk (full cream)
  • 0.13 cup ghee pure desi ghee
  • 3/4 tsp Honey
  • 3/4 Pieces Elaichi (crushed)
  • 125 Kg Milk (full cream)
  • 1/4 cup mango puree
  • 0.13 tsp Cardamom powder
  • 0.06 cup Milk powder
  • 1.25 As Required 5 to 6 Saffron strands (soaked in 2 tbsps
  • 1/4 tbsp Pistachios mix dry fruits chopped
  • 1/2 tbsp Honey

Directions: Mango Malpua With Mango Rabdi Recipe

  • STEP 1.Mango Malpua
  • STEP 2.1.In a bowl, take maida, semolina and mix properly.
  • STEP 3.2. Slowly add chilled milk and keep mixing to form the batter of paste like consistency.
  • STEP 4.3. Add mango pulp and crushed elaichi nd salt in the batter. Give it a good stir so that no lumps are formed.let the batter rest.
  • STEP 5.4. , heat desi ghee in a kadhai.
  • STEP 6.5. Once the ghee is completely heated, put on low flame and add the batter slowly to form a round poori like shape.
  • STEP 7.Fry on low flame from both sides until golden brown. Mango Malpua is ready.
  • STEP 8.6. In a bowl mix honey with Luckwarm water. syrup is ready. Now pour this syrup on Malpua. And leave for 5 to 7 min for soak the honey syrup. Malpua is ready.
  • STEP 9.7. Firstly Boil milk in a wok . Once it comes to a boil, reduce to low heat Keep stirring at regular intervals, pushing the layer of malai (top of milk) that forms on the top towards the sides of the vessel. Continue to do this till the milk is reduced to less than half of the original quantity.
  • STEP 10.8. When the milk would have reduced Add cardamom powder milk powder and half of the chopped nuts and mix. continue to simmer the mixture till it reaches a third of the original quantity.add saffron and mix well. Turn off heat and allow to come to room temperature.add Honey mix well.
  • STEP 11.9. Add the mango puree and mix well till well combined. Remove to a bowl and chill for a couple of hours.
  • STEP 12.10..Garnish with the remaining chopped pistachios, almond flakes and chopped mango pieces. Mango Malpua With Mango Rabdi is Ready to serve.
