This recipe is specially for those who love to experiment with cooking! this is a lengthy recipe but worth giving a shot! i change my recipes up often, using different greens and fruit that are in season. Lately, i had this strawberry dry paan. The flavors married well. And hence, it clicked my mind that why not to create a unique combo of betel leaves and fruits. Then i came across beautiful mangoes and thought this might work. So took a few ripe alphonso mangoes and gave it a shot! the result was just superb.

  • 2 plain betel leaves
  • 1/4 cup Sugar
  • 1.50 green cardamoms, broken
  • As required For the Cottage Cheese Mixture
  • 1/2 cup 1/2 grated cottage cheese
  • 1 green chillies, finely chopped
  • 1/4 teaspoon crushed ginger
  • 1/4 teaspoon green cardamom powder
  • As required Salt
  • As required Black pepper powder
  • As required oil for deep frying
  • As required Red chilli powder for sprinkling
  • 1 teaspoon finely chopped coriander
  • As required For the Korma Sauce
  • 2.50 tablespoon Ghee
  • 2.50 Cloves
  • 1.50 green cardamoms
  • 1 Bay Leaves
  • 1 tablespoon ginger garlic green and chilli paste
  • 1 Medium sized onions
  • 1/2 tablespoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon cinnamon powder
  • 0.38 cup Yogurt
  • 1.50 tablespoon fresh cream
  • sprig coriander for garnishing
  • As required For Cashew melon seed and almond paste
  • 5-6 Cashews
  • 1 teaspoon melon seeds
  • 4-5 almonds
  • As required For chickpea Batter
  • 1/2 cup chickpea/besan flour
  • 1/4 teaspoon red chili powder
  • 0.13 teaspoon turmeric powder
  • As required water to make the batter
  • As required Salt
