One of the significant dishes of Kerala onam sadya. Mambazha Pulissery-Mambazha-Mango Kalan is a sweet and sour curry simmered in a yogurt coconut gravy tempered with few ingredients, which takes the taste of this curry a level higher. Traditionally, Mambazha-Mango Pulissery-Kalan recipe is made using ripe nadan/nattu manga-mango, a special variety of mango having a unique smell and small in size with thick green skin, are super juicy and fibrous.

Ingredients for Mambazha Kaalan Recipe

  • 1 Ripe mango peeled
  • 0.08 cup Grated coconut
  • 0.17 teaspoon Chilli Powder
  • 0.08 teaspoon Turmeric powder
  • 0.17 pinch Cumin seeds
  • 1/2 Garlic Cloves
  • 1/2 No.s Green chilli
  • 0.17 cup Curd
  • 0.17 Curry leaves stem
  • 1/2 No.s Dry red chilly
  • 0.08 teaspoon Mustard seeds
  • 1/25 teaspoon Fenugreek seeds
  • 0.17 pinch Salt
  • 1/2 tablespoon Coconut oil
  • As required Water

Cooking Directions

  • STEP 1.Take a mixer grinder, add in ½ cup of grated coconut, 1 tsp of chilli powder, ½ tsp of turmeric powder, a pinch of cumin seeds, 3 garlic cloves and ¼ cup of water.Grind to form a paste.
  • STEP 2.Heat a pan on the stove, add 6 peeled ripe mangoes, 1 cup of water, 3 green chillies split in half and a pinch of salt. Cook the mangoes in medium flames for 5 minutes with the lid on. When the mix comes to a boil, transfer the prepared coconut paste and mix well.
  • STEP 3.For preparing the tempering heat a frying pan with 3 tbsp coconut oil. Add ½ tsp mustard seeds. When mustard seeds splutter, add ¼ tsp fenugreek seeds, 1 stem of curry leaves and 3 chopped dry red chillies. Saute well. Transfer the tempering to the curry.
