Malai Chicken is a less spicy gravy based dish, full of flavours from various pastes used in making the gravy. The chicken marinated in curd and cooked in ghee, cardamom, ginger, onion and other delectable spices makes it a perfect go to with naan or rumali roti.

Ingredients for Malai Chicken Recipe

  • 200 Grams Chicken medium sized pieces
  • 1/2 Cups Milk
  • 1/4 Cup Curd
  • 1/2 Tablespoons Fresh cream
  • 25 Grams Ghee
  • 1/2 Tablespoons Refined oil
  • 3/4 Tablespoons Cashew nuts
  • 1/2 Tablespoons Melon seeds
  • 3/4 Pieces Cardamom
  • 1/4 Teaspoon Cardamom powder
  • 1/2 Teaspoons Black pepper powder
  • A Few Green chillies
  • 2.50 Grams Ginger
  • 1/2 Cups Chopped onions

Directions: Malai Chicken Recipe

  • STEP 1.1) Wash and clean the chicken pieces and then apply salt over the chicken pieces. Rub well and keep aside.
  • STEP 2.2) Now take a deep bottomed pan, add 1 teaspoon of ghee and one tablespoon of oil. Then add cardamom, cashew nuts,chillies,melon seeds, ginger pieces, chopped onion and saute well. Fry till the colour changes slightly to brown.
  • STEP 3.3) Now add half cup of water into the pan and make a soft paste. Keep aside.
  • STEP 4.4) Now take a pan, add ghee and chicken pieces. Then add milk. Cover the pan with a lid and cook until the chicken pieces become tender. Now keep this pan aside.
  • STEP 5.5) Take another pan, add the previously made paste. Then add cardamom powder and black pepper powder.
  • STEP 6.6) Add the chicken pieces into this gravy and add whipped curd and fresh cream. Cook on low flame for 5 to 7 minutes.
  • STEP 7.7) Malai Chicken is ready. Serve hot with naan, rumali roti or paratha.
