Malabar parotta or Kerala parotta is a layered flat bread made from refined flour ( maida) Kerala parotta is a layered flaky flat bread that is popular across the whole of south India. It is a variation of the North Indian Lachha paratha or layered paratha. They are also called as Malabar paratha.

Ingredients for Malabar Parotha Recipe

  • 2 cup All purpose flour
  • 1 teaspoon Ghee for dough
  • 1 teaspoon Salt
  • 1/2 teaspoon Sugar
  • 1/2 cup Warm Milk
  • As required Ghee for rolling and frying

Directions: Malabar Parotha Recipe

  • STEP 1.into the zodiac master chef jar add the atta kneading blade. Then add 2 cups all purpose flour, 1 tsp ghee, 1 tsp salt, ½ tsp sugar and ½ cup warm milk. Knead to make a dough, adding a little water at a time till the dough comes together.

  • STEP 1.once the dough comes together, transfer it to a bowl, add 1 tsp ghee and knead it by hand for a few seconds to make a smooth dough.

  • STEP 1.3divide the dough into large lemon sized balls.

  • STEP 1.divide the dough into large lemon sized balls & dust a flat surface with flour. Press the ball of dough down gently. Dust it with flour and roll it out into a thin sheet. Spread a little ghee on the top and dust it with four.

  • STEP 2.5then make small pleats (like folding a paper fan) and spread ghee and dust flour between each fold.

  • STEP 3.6then roll into a pinwheel.

  • STEP 4.7press it down gently, dust with flour and roll it out into a paratha.

  • STEP 5.8place the paratha on a preheated pan and cook for a few seconds till colour begins to change. Flip it over and cook the other side. Smear ghee and flip it over again. Cook on both sides on medium heat till browned and lightly crisp.

  • STEP 6.9serve hot with veg kurma or egg curry.
