It is also known as maida murukku & it's a must have snack during festivals like Diwali.This traditional Gujarati & Marathi style chakri recipe uses maida & require dry steaming the flour.This unique process provides the melt-in-mouth crispness & tastes like no other.That's not all the taste is even more accentuated by fragrant feel of sesame seeds.

Ingredients for Maida - Chakli. Recipe

  • 0.06 cups maida.
  • 1/50 nos Salt.
  • 0.03 teaspoon Black sesame seeds.
  • 1/50 tbsp Oil + for deep frying.

Directions: Maida - Chakli. Recipe

  • STEP 1.Sieve 2 cups maida,tie it in a cotton cloth & place tied maida in a small steel container.
  • STEP 2.Close the container with Lid.place steel container in a Pressure cooker & pour water untill it reaches half the height of the container.Close the lid of the cooker & steam it for about 15-17 Min.(do not worry about no. Of whistles).
  • STEP 3.Turn off flame & let it stand for 5-7 min.Remove the lid of the cooker & open the container.Tied maida would have been transformed into a large lump.Take it out & place in a large bowl & untie it.
  • STEP 4.Pound it with pestle & break into flour like consistency.
  • STEP 5.Sieve again & discard all large & small lumps.
  • STEP 6.Add & mix black sesame Seeds, 1/2 tbsp oil & salt in Sieved flour.
  • STEP 7.Add water as needed in small quantities(2 tbsp at a time) & prepare a smooth & soft dough (like chapati dough).
  • STEP 8.Take star Shaped mold & fit it in the chakli maker container.
  • STEP 9.Fill it with prepared dough.
  • STEP 10.Close the container tightly with it's lid. Form spirals or coils on a paper or a thick plastic sheet by twisting Its handle with one hand while moving it in spiral motion using another hand.
  • STEP 11.Add spirals in medium hot oil & reduce the flame to Low,deep fry untill they turn light golden brown.
  • STEP 12.Drain & transfer to plate.Allow it to cool to room temperature & serve or store it in Airtight container & consume within 15-20days.
