  • STEP 1.Boil the potatoes until tender, then peel and dice them.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped onions and sauté until golden brown.
  • STEP 4.Add ginger-garlic paste and sauté for a minute.
  • STEP 5.Add chopped tomatoes and cook until they turn mushy.
  • STEP 6.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 7.Add the diced potatoes and mix until they are coated with the spice mixture.
  • STEP 8.Cover and cook for 5-7 minutes, stirring occasionally.
