Sweet tasty Malyalam snack. This dish is also closest cousin to Manoharam , one of traditional sweet, a must for Tamil Iyer marriages. Manoharam is also a sweetened noodles, however difference between madhura seva and manoharam is that madhura seva is sweetened with sugar where as manoharam is made with jaggery. Madhura seva means sweet noodles in Malayalam. You can see them in bakeries, kept in glass jars.

Ingredients for Madhura Seva Recipe

  • 0.13 cup Roasted Rice flour
  • 1/4 cup Gram flour
  • As required Salt
  • As required Water
  • 1/4 cup Sugar
  • 1/2 teaspoon Cardamom powder

Directions: Madhura Seva Recipe

Cooking Directions

  • STEP 1.In a bowl mix ¼ cup of roasted rice flour, ½ cup of gram flour and a pinch of salt.
  • STEP 2.Pour water little by little.Knead to form a dough. Keep aside for 5 minutes
  • STEP 3.Fill the dough into sevanazhi. Preheat a pan with cooking oil on medium flame.
  • STEP 4.Pipe out the dough into the frying pan. Stir fry till pale yellow.
  • STEP 5.Into a saucepan add ½ cup of sugar, 1 tsp of cardamom powder and 3 tbsp of water.
  • STEP 6.Melt the sugar to form one string consistency. Now transfer the fried seva into the sugar syrup and coat it well. Serve the madhura seva into a plate.
