STEP 1.Peel aloo , wash it , prick them , toss it with lil salt , keep aside.
STEP 2.Take a wok , add 1 tbsp oil , heat it.
STEP 3.Fry aloo till light brown, take out in a dish , keep aside.
STEP 4.Now add rest of the oil in the same wok, heat it .
STEP 5.Add whole garam masala, saute it for a minute .
STEP 6.Add ginger garlic paste , saute it until rawness is released. Add very lil water to avoid burning .
STEP 7.In goes onion paste , again add lil water , stir fry it for a minute .
STEP 8.Lower the flame , cover it with the lid , cook it until golden brown.
STEP 9.Stir in between.
STEP 10.Mix dhania powder & red chilli powder with lil water , add in the masala , also add salt , give a stir .
STEP 11.Cook it until oil has oozed out .
STEP 12.Now add garam masala powder , mix it well .
STEP 13.In goes fried aloo , stir fry it for a minute .
STEP 14.Sprinkle very lil water , cook it covered on low flame until oil has surfaced.
STEP 15.Open the lid , add desi ghee , mix well .
STEP 16.Now add 1.5 cup water , mix well .
STEP 17.Transfer it into a pressure cooker , place the lid , give 2 whistles on high flame .
STEP 18.Lower the flame , cook it for 7 minutes.
STEP 19.Turn off the flame , allow it to depressurise naturally.
STEP 20.Open the lid after 5 minutes .
STEP 21.Take out in a serving bowl , garnish it with chopped dhania patta and ginger juliennes .
