1/2 piece Large onion, chopped into large

1/2 Lime, zest 0.5 of it and reserve the zest
1/2 tablespoon Mild patak's original curry paste
1 tablespoon Tomato paste
1/2 teaspoon Ground Cumin
As required Coconut oil or neutral tasting oil for cooking
1/2 can Full fat coconut milk. i like thai kitchen brand
As required Sea salt or kosher salt
