Making lauki paratha is quite easy. First of all you have to choose a young tender lauki . If lauki is mature and have hard seeds then scoop out the seeds before grating it. The seeds will ruin the taste and texture of the lauki paratha. I have used wheat flour and some gram flour in it. But you can make it with only wheat flour or you multigrain flour or any flour of your choice. You can add some chopped greens of your choice to make it more healthier and crisp.

Ingredients for LAUKI PARATHA Recipe

  • 0.38 Cups bottle-gourd diced
  • 1/2 Cups Wheat flour chakri
  • 0.06 Cups besan
  • 1/2 Pieces One chopped greenchilli
  • As Required Coriander (chopped)
  • As Required Turmeric powder.a pinch
  • As Required Spoon Chili Flakes
  • As Required Red chilli and coriander leaves for garnish
  • To Taste Salt
  • A Pinch asfoiteda (hing)
  • As Required Cumin seeds corriander
  • 0.38 Tbsp Cooking oil or ghee
  • 1/2 Tbsp Yogurt

Directions: Lauki Paratha Recipe

  • STEP 1.Peel and grate the bottle gourd ,discard the hard mature seeds.
  • STEP 2.In a bowl take wheat flour and gram flour and all the spices and mix well.
  • STEP 3.Now add the grated lauki , yogurt , oil and mix well.
  • STEP 4.Now add little water if needed , some times the lauki releases enough water so you don't need any extra water to make the dough.
  • STEP 5.Make a medium stiff dough ,cover and rest for 5 minutes.
  • STEP 6.Make equal sized balls from the dough .
  • STEP 7.Take a dough ball ,dust with dry flour and roll to make medium thin roti.
  • STEP 8.Heat a tawa / gridlle put the rolled paratha over it and cook from both sides on medium heat.
  • STEP 9.Now apply a tsp oil or ghee and roast by pressing gently with a spatula till nice golden spots appear on top.
  • STEP 10.Repeat the same with other side of paratha.
  • STEP 11.When get roasted from both the sides then remove from the tawa and serve hot.
  • STEP 12.Serve with any tangy curry of your choice , raita or pickle
