This is all time favorite sweet dish. Once you get the Dudhi grated, it’s very easy to make. This is my mother’s recipe that makes delicious Dudhi Halwa
STEP 1.Wash, cut and grate Dudhi Bhopala (Lauki / Bottle Gourd). Remove seeds, if any. Do not grate peels.
STEP 2.2. If you are not making Halwa immediately after grating, add water to grated Dudhi so that it will not turn brown.
STEP 3.3. In a thick bottom pan, heat Ghee.
STEP 4.4. Squeeze water from Dudhi, measure Dudhi and add it to the pan and sauté for a minute
STEP 5.5. Cook covered without adding water till Dudhi is soft. Keep stirring after every 3-4 minutes.
STEP 6.6. Add Milk. Cook for another 10 minutes.
STEP 7.7. If you have 4 cups of grated Dudhi, take ¾ to 1 cup of sugar. Add sugar to Dudhi. Mix and cook without lid.
STEP 8.8. Mixture will release water. When you cook further, it will start thickening.
STEP 9.9. Loosen Mava (Milk Solids) in a plate. When water almost dries from the mixture, add Mava to the pan. Mix well to ensure there are no lumps of Mava.
STEP 10.10. Add salt (I add salt in almost all sweet dishes except Basundi/Rabdi, it enhances the taste; If you don’t like salt, don’t add).
STEP 11.11. Add Cashew nuts and Cardamom powder; Keep cooking.
STEP 12.12. When all the water evaporates and Halwa becomes thick, switch off the gas.
STEP 13.13. Dudhi Halwa is ready. You can enjoy Dudhi Halwa hot or cold. Store it in refrigerator. It will last for 5-6 days.
