Tasty and spicy Mangalore chicken curry.
A simple and tasty dish for a weekday meal that takes no time at all to make. The coconut paste happens to be an important ingredient of the dish.
STEP 1.1. Take all the masala and grind it well. Blend and check for consistency. Keep the paste aside.
STEP 2.2. Take a saucepan and add coconut oil and bay leaves, fry bay leaf just enough with the oil and remove. Add onions and tomatoes and fry until the vegetables soften.
STEP 3.3. Add chicken, base masala and a gravy made by tempering the base masala with turmeric, onions and curry leaves. Add coconut milk, salt and a cup of water.
STEP 4.4. Stir the ingredients one last time before covering the saucepan.
STEP 5.5. Let the gravy develop over low heat flame before turning off.
STEP 6.6. Serve with hot rice.
