Kothimbir vadi is tempting crisp snack from the Maharashtrian cuisine made with gram flour / besan , coriander leaves , peanut , sesame seeds and spices .
STEP 1.In a mixing bowl add the dry ingredients like gram flour, rice flour, turmeric, red chili powder, sugar, salt, peanuts, Sesame seeds and curd. add Water in it gradually and whisk it in the same direction and make it lumps free. Add in green chilli ginger and mix well.
STEP 2.Then keep a pan on flame, add oil and keep the flame slow and put the batter in it. Stir it continuously and cook it on low flame till it turns thick.It will take 5-6 minutes to thicken.
STEP 3. Now add coriander leaves to it and keep stirring till it mixes well. Remove it from the flame.
STEP 4.Remove it in a greased tin and spread it evenly in the tin. Cool down the mixture for about 30 mins and unmould it and cut them into 1 inch cube or as your choice.
STEP 5.Now to shallow fry the vadi put 2 tbsp oil in a non stick pan and after the oil is heated, place the Kothimbir Vadi in the pan and fry them till they become nice red and crisp from both the sides. Now turn off the gas. Now garnish it with coriander chutney
STEP 6.You can also deep fry.Deep fry the cubes in medium hot oil till its golden brown in color on both the sides and the dish is ready to be served with coriander chutney.
