Traditional kothimbir vadi is deep fried. But to make it a little healthy, I have shallow fried them. Kothimbir vadi is a delicious savory crisp snack from the Maharashtrian cuisine made with gram flour (besan), coriander leaves, peanut, sesame seeds and spices. These savory, herby and flavorful bites can be pan-fried or deep-fried. They are a popular tea-time fritter snack loaded with coriander leaves (cilantro)

Ingredients for Kothimbir Vadi Recipe

  • 2 cup fresh coriander leaves finely chopped
  • 1 cup basin
  • tablespoon chopped ginger half
  • tablespoon chopped garlic half
  • gram reen chilli chopped one
  • 1 tablespoon sesame seeds
  • 2 tablespoon roasted peanuts powder
  • tablespoon red chilli powder Half
  • 1 tablespoon cumin coriander powder
  • 14 tablespoon turmeric powder
  • 18 tablespoon baking soda
  • As required Salt
  • 1/4 cup Water
  • As required Oil

Directions: Kothimbir Vadi Recipe

step 1

  • STEP 1.In a large mixing bowl take 2 cups of chopped coriander leaves.

  • STEP 2.Also add 1 cup of besan.

  • STEP 3.Additionally add 1 tsp ginger-garlic paste, 1 green chilli, ½ tsp red chilli powder, ½ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder, ¼ tsp garam masala powder, 1 tsp sesame seeds, salt and 1 tsp lemon juice.

  • STEP 4.Combine well making sure all the spices are mixed well.

  • STEP 5.Also squeeze and mix making sure the coriander leaves are squeezed well.

  • STEP 6.Further add water as required and begin to knead.

  • STEP 7.Knead to soft dough.

  • STEP 8.Shape the dough to a cylindrical shape greasing hands with oil.

  • STEP 9.Steam the dough for 15-20 minutes.

  • STEP 10.Cool the dough completely and cut them into thick slices.

  • STEP 11.Further, deep fry or shallow fry in hot oil.

  • STEP 12.Stir occasionally till the wadi turns crisp and golden brown.

  • STEP 13.Finally, serve kothimbir vadi garnished with coriander leaves along with cutting chai.
