This keto ramen is one of my go-to lunch staples. This soup has all the flavours we love about a good Japanese noodle soup but none of the carbs. A good one to add to your low carb lunch rota!

Ingredients for Low Carb Keto Ramen Recipe

  • 1 teaspoon olive oil
  • 2 gram boneless chicken thighs / 13 oz
  • 1/2 tablespoon ginger grated
  • 1/2 garlic clove minced
  • 1/2 medium red chilli diced
  • 0.88 cup 400 ml chicken stock
  • 40 gram 2.8 oz wild mushrooms I used shiitake
  • 1/2 No.s tbsp coconut ami
  • 1/2 tablespoon toasted sesame oil
  • 1 large eggs
  • 1.75 ounce 100 g konjac noodles or kelp noodles
  • 1/2 small bok choy halved
  • 1/2 zucchini / courgette julienne
  • 1 tablespoon scallions / spring onions green part, sliced fine
  • 1/2 teaspoon sesame seeds option to toast
