The aromatic tempering of garlic, mustard seeds, cumin seeds and curry leaves adds an amazing flavor to khichdi making it a perfect way to use the leftover plain khichdi. Vaghareli Khichdi (Vaghar is a Gujarati word for tempering in English and tadka in Hindi) is a very popular comfort food among people of Gujarat and is often known as Gujarati Khichdi.   • As Required For Making Khichdi
  • 0.13 cup rice (any brand)
  • 0.06 cup Yellow moong dal
  • 0.06 cup Tuvar dal
  • 0.06 cup Green moong dal
  • 1/4 pieces medium size chopped potato in small
  • 0.06 cup Green peas
  • 0.06 cup Pigeon peas
  • 1/4 Pieces small chopped brinjal
  • 0.13 Pieces Chopped carrot
  • 0.06 cup cup chopped bottle gourd
  • 0.06 cup coccinia gourd
  • 0.06 cup cup chopped cauliflower of small
  • 1.50 Pieces Chopped french beans
  • 1.25 cup water
  • 0.13 tsp Turmeric powder
  • 0.38 tsp Salt
  • As Required For Tempering
  • 1/4 tbsp Oil
  • 1/2 tbsp Ghee
  • 0.38 tsp Cumin seeds
  • 3/4 Pieces small size chopped onion
  • 1.75 Pieces Sweet curry leaves
  • 1/2 g finely chopped green chillies
  • 1/4 tbsp Ginger + garlic paste
  • 0.06 tsp Asafoetida
  • 0.06 tsp Turmeric powder
  • 0.38 tsp Red chilli powder
  • 1/4 tsp Garam masala
  • 1/4 tsp Cumin coriander powder
  • 0.13 tsp Salt
  • As Required reen coriander leaves as per required
  • As Required For Ganishing For garnishing
  • As Required reen coriander leaves

  • As Required Tometo slices

Directions: Kathiyavadi Vaghareli Khichdi (saurastra Special) Recipe

  • STEP 1.First add rice, yellow moong dal, Tuvar dal and green moong dal in a બાઉલ, wash with clean water and soak it in another clean water for 10 to 15 minutes.
  • STEP 2.Now cut everything as shown in the vegetable ingredients and wash with clean water. (You can skip any of these vegetables if you want)
  • STEP 3.Now drain the water from the soaked rice and add it to the cooker and add all the chopped vegetables on it. Now add water, turmeric powder and salt, mix and cook 4 whistles in a cooker. (If there is less water in the khichdi, you can add extra water and stir the khichdi.
  • STEP 4.Now let's tempering this khichdi. For this, heat oil and ghee in a pan, add cumin seeds, chopped onion and saute till golden on medium flame. Now add sweet curry leaves, green chillies and ginger + garlic paste and saute.
  • STEP 5.Now add asafoetida, turmeric powder, Red chilli Powder powder, garam masala, coriander cumin powder and salt and mix and cook for 1 minute.
  • STEP 6.Now our delicious Healthy Kathiyawadi Vaghreli khichdi is ready to serve. Garnish this khichdi with green coriander leaves, cucumber and tomato slices. Serve this khichdi with mixed salad, pickles, masala curd or masala bittermilk with papad.
