  • 2 Small Brinjals, Chopped
  • 1/2 tablespoon Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Urad Dal
  • as per your need A Few Curry Leaves
  • 1/2 Onion, Finely Chopped
  • 1/2 tablespoon Tamarind Pulp
  • 1 tablespoon Grated Coconut
  • 1/2 tablespoon Sambar Powder
  • 1/4 teaspoon Turmeric Powder
  • As required Salt To Taste
  • 1 cup Water
  • as per your need Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Heat oil in a pan and add mustard seeds, urad dal, and curry leaves. Fry until the mustard seeds splutter.
  • STEP 2.Add chopped onions and sauté until they turn golden brown.
  • STEP 3.Add brinjals and cook until they are slightly tender.
  • STEP 4.In a separate bowl, mix tamarind pulp, grated coconut, sambar powder, turmeric powder, and salt. Add this mixture to the pan and cook for a few minutes.
  • STEP 5.Add water and bring the gravy to a boil. Simmer for 10-15 minutes until the flavors are well combined.
  • STEP 6.Garnish with coriander leaves and serve hot with steamed rice or dosa.

Cooking Tips

  • Choose small and tender brinjals for better taste and texture.
  • Soak the brinjals in water after chopping to prevent them from turning brown.
  • Adjust the spice level according to your preference by adding more or less sambar powder.
