This Pulao is full of roasted nuts and mild spices. This pulao is slightly sweet in taste. This is a famous rice pulao from Kashmiri cuisine. This pulso is made with. long grained basmati rice.
STEP 2.Take 1 cup Basmati rice , Wash thoroughly and soak for 30 minutes. Heat 1 tbs ghee and add 1/2 cup Cashew. Roast them into golden colour. Transfer it into a plate. Roast 1/2 cup Badam for 2 minutes. Remove it and add 1/4 cup two variety raisins and roast. Then heat 1 tbs oil and 1 tsp ghee in a pan. Add 1 cup of sliced onions and fry it into rich brown colour and crispy. Kerp it aside
STEP 3.Heat ghee in a wide pan. Add small piece of cinnamon, 3 cloves, black cardamom, tsp fennel seeds ,green cardamom, bay leaf, shahi jeera. Roast them til nice aroma comes. Now add the basmati rice ( drain the water and add ). Gently roast the rice for 2 minutes. Then add 2 cup hot water ( for one cup rice ). Add salt, saffron milk ( soak few saffron strands in warm milk and add ) and gently mix it. Close the pan and cook for 10 minutes in medium low flame. After 10 minutes the rice is coojed perfectly. Garnish with roasted cashew , badam, raisins and fried onions.
