  • 1/4 Small Onion, Finely Chopped
  • 1/4 Lemon Sized Tamarind, Soaked In Water
  • 1/2 tablespoon Oil
  • 1/4 teaspoon Mustard Seeds
  • 0.13 teaspoon Fenugreek Seeds
  • as needed A Few Curry Leaves
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/4 teaspoon Coriander Powder
  • As required Salt To Taste
  • as needed Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Peel and chop the yam into small cubes.
  • STEP 2.Soak tamarind in water and extract the juice.
  • STEP 3.Heat oil in a pan and add mustard seeds, fenugreek seeds, and curry leaves. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 4.Add the chopped yam and cook for a few minutes.
  • STEP 5.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 6.Add the tamarind juice and enough water to cover the yam. Bring it to a boil and then simmer until the yam is cooked and the gravy thickens.
  • STEP 7.Garnish with coriander leaves and serve hot with rice or roti.
