Traditional sweet snack made from rice and jaggery.Kalathappam or Cooker Appam is a traditional styled Malabar specialty rice cake prepared in a pressure cooker.Easy and quick recipe to prepare.It is a populardish enjoyed as a evening snack or as a breakfast.This recipe can also be prepared in home.

Ingredients for Kalathappam Recipe

  • 1 cup Rice
  • 300 gram Jaggery
  • 1 No.s Cardamom
  • 1 pinch Cumin seeds
  • 1 tablespoon Cooked Rice
  • 3 No.s Small Onion
  • 2 tablespoon Finely chopped Coconut
  • 1 pinch Salt
  • 1.50 cup Water
  • 4 tablespoon Coconut Oil
  • 2 pinch Baking Soda

Directions: Kalathappam Recipe

step 1

  • STEP 1.Soak washed rice for 4hrs. Drain off excess water.

  • STEP 2.Cut the coconut into small pieces.

step 3

  • STEP 3.1 take a jar and add the rice in it. Add a pinch of cardamom seeds and a pinch of cumin seeds. Gradually add some water and grind it. Add 1 tbsp cooked rice. Grind well. Keep it aside.

  • STEP 4.2 take jaggery in a pan and add ½ cup water. Heat it in medium flame and let the jaggery melt.

  • STEP 5.3 heat coconut oil in a pan and fry the coconut in medium flame. When it turns golden transfer it to a plate. Add the chopped onion and fry it until golden. Transfer it to the plate.

  • STEP 6.4 using a sieve, sieve the jaggery solution. Add this solution to the batter, at the same time mix it continuously. Add a pinch of salt and 2 pinch of baking powder. Mix well.

  • STEP 7.5 heat a pressure cooker in high flame and pour the remaining coconut oil(after frying coconut and onion) and 2 more tbsp coconut oil. Pour the batter in the cooker, add the fried coconut and onions on top. Cover the cooker with its lid. Make sure you don’t put the weight on the lid. Cook it in high flame for 1 ½ min. Then cook it in low flame for 15 mins. Turn off the flame.

  • STEP 8.6 let it cool down. Open the cooker and take out the kalathappam and cut it into desired shapes and sizes.

  • STEP 9.7 kalathappam is ready to be served.
