A spicy Rajasthani treat and street food recipe. It is basically fried rice combined with veggies, gram flour, pomegranate, saffron milk, spices and dry fruits.
STEP 1.Take a boiler and add some water, make it boil.
STEP 2.Take 2 cups of gramflour in a bowl, add some fennel seeds, salt, red chilli powder, ghee and prepare a dough. Use your hands to make gatta
STEP 3.Now drop them in the boiler and boil them.
STEP 4.Transfer them in a bowl.
STEP 5.Take a pan, heat some oil, and fry the vegetables in it. Add some cauliflower and fry it. Then deep fry the potatoes, fry some onions, now take 2 pieces of bread and deep fry them too. Deep fry the cashews and almonds too. Then fry some gattas too
STEP 6.Take a pan again, add some oil, heat it and then add some clove, some onions and cook it. Now add some curd, red chilli powder, turmeric powder and cook well. Once its done then add the fried vegetables. Cook for 2-3 minutes.
STEP 7.Now take some rice and make a layer of it on a non stick pan, add some kesar milk and some pomegranate and some gattas gravy too. Also lay a layer of saffron milk , pomegranate, raisins and gatta again.
STEP 8.The upper layer will be of the fried bread. Garnish with some garam masala and lemon juice.
STEP 9.Now cover the lid and cool for 5-6 minutes. Let the contents absorb the tastes of spices.
STEP 10.The kabuli is ready.
