Cooking Directions

  • STEP 1.In a bowl, combine allspice, thyme, garlic, scotch bonnet peppers, salt, black pepper, and lime juice to make the jerk marinade.
  • STEP 2.Place the fish fillets in a shallow dish and pour the jerk marinade over them. Make sure the fish is well coated. Let it marinate in the refrigerator for at least 1 hour.
  • STEP 3.Preheat the grill to medium-high heat. Remove the fish from the marinade and grill for about 4-5 minutes per side, or until the fish is cooked through and has a nice charred crust.
  • STEP 4.Serve the Jerk Fish hot with rice and peas or grilled vegetables. Enjoy!
