A healthy cookie homage to the Iyengar bakeries in Karnataka, made with atta, oats and flavoured with herbs. Make this healthy Whole Wheat and Oat Biscuits that are delicately spiced with green chillies, coriander, curry leaves and with a hint of salt and sugar. Serve these chai biscuits along with a cut of Adrak chai or even a cup of filter coffee for a very comforting evening snack.

Ingredients for Iyengar Style Wholewheat & Oats Khara Biscuit Recipe

  • 1 cup Whole Wheat Flour
  • 1/2 cup Instant Oats
  • 1/4 cup Butter
  • 1 teaspoon Salt
  • 1/4 cup Sugar
  • 2 sprig Coriander leaves finely chopped
  • 2 sprig Curry leaves finely chopped
  • 1/2 teaspoon Whole Black PepperCorns coarsely crushed
  • 1 No.s Green Chilli finely chopped
  • 2 tablespoon Milk

Directions: Iyengar Style Wholewheat & Oats Khara Biscuit Recipe

step 1

  • STEP 1.Pre-heat the oven to 180 degree celsius for 10 minutes. In the master chef jar place the atta kneading blade and add 1 cup whole wheat flour, ½ cup instant oats, ¼ cup chopped butter, ¼ cup salt, ¼ cup sugar.

  • STEP 1.Blitz all the ingredients to get a coarse crumb texture. Adding 2-3 tbsp of milk at a time, continue to blend till a firm cookie dough consistency is reached. Do not add too much milk.

  • STEP 1.Shape the iyengar biscuits into round and flat shaped cookies, place them on a baking sheet/ tray and bake them in the preheated oven for about 25 to 30 minutes till they develop a golden crust and are crisp.

  • STEP 1.Once done, take them out of the oven and allow the cookies to rest on a wire rack for at least 15 minutes until it cools down completely.

step 5

  • STEP 1.The iyengar biscuits will continue to cook and get crisp white it is resting on the wire rack and hence it is important to do this process.

  • STEP 1.Once done, store these whole wheat and oats khara biscuit in air tight containers.
