Cooking Directions

  • STEP 1.Rinse and soak the pinto beans in water for at least 4 hours or overnight.
  • STEP 2.Drain the soaked beans and add them to the Instant Pot along with chopped onions, garlic, diced tomatoes, vegetable broth, cumin, chili powder, and salt.
  • STEP 3.Close the lid of the Instant Pot and set the pressure valve to the sealing position. Cook on high pressure for 25 minutes.
  • STEP 4.Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then carefully do a quick release.
  • STEP 5.Open the lid and stir in chopped bell peppers and corn. Cook on sauté mode for an additional 5 minutes until the vegetables are tender.
