Cooking Directions

  • STEP 1.Season the beef with salt and pepper. Set the Instant Pot to sauté mode and heat the oil. Brown the beef in batches until browned on all sides.
  • STEP 2.Remove the beef from the Instant Pot and set aside. Add the onions, carrots, and celery to the pot and sauté until softened.
  • STEP 3.Add the garlic, tomato paste, and thyme to the pot and cook for another minute. Deglaze the pot with red wine, scraping up any browned bits from the bottom.
  • STEP 4.Return the beef to the pot and add the beef broth, potatoes, and bay leaves. Close the Instant Pot and set it to high pressure for 30 minutes.
