Cooking Directions

  • STEP 1.In a bowl, mix rice flour, chickpea flour, yogurt, ginger paste, green chili paste, turmeric powder, salt, and water to make a smooth batter.
  • STEP 2.Grease a steamer plate with oil and pour the batter into it. Steam for 15-20 minutes or until the dokhla is cooked and firm.
  • STEP 3.Heat oil in a small pan and add mustard seeds. Once they crackle, add curry leaves and green chilies. Pour this tempering over the steamed dokhla.
  • STEP 4.Allow the dokhla to cool for a few minutes, then cut it into squares or diamond shapes.
  • STEP 5.Serve the Instant Dokhla with green chutney or tamarind chutney.

  • Make sure the batter is smooth and lump-free for a soft and spongy texture.
  • You can add a pinch of baking soda to the batter for extra fluffiness.
