Ingredients for Indo Mexican Roasted Veg Taco Recipe

  • 1 teaspoon Herbed butter
  • 2 No.s Potatoes peeled and cut into wedges
  • 1 teaspoon Cumin powder
  • 1 cup Mixed bell peppers thinly sliced
  • 1/2 cup Cauliflower Florets
  • 1 flakes Red chilli tsp
  • 2 tablespoon Veg mayo
  • As required Salt
  • As required Taco Shells

Directions: Indo Mexican Roasted Veg Taco Recipe

step 1

  • STEP 1.1 in a preheated pan add ½ tsp herbed butter, 2 potatoes peeled and cut into wedges, salt to taste, 1 tsp cumin powder. Stir fry till potatoes are cooked and roasted. Optionally, cover the pan for faster cooking. Keep aside cooked potatoes.

  • STEP 2.2 in a pan add 1/2 tsp herbed butter, 1 cup mixed bell peppers thinly sliced,½ cup cauliflower florets, salt to taste, 1tsp red chilli flakes.

  • STEP 3.3 saue till the cauliflower and peppers are cooked through.cover with lid and steam cook for a few minutes to quicken the cooking. Saute till golden brown.

  • STEP 4.4 toss in the roasted potatoes and sweet corn. Add 2 tbsp veg mayo.

step 5

  • STEP 5.5 stir well to combine all the vegetables with the mayo.

step 6

  • STEP 6.6 spoon the roasted vegetables into the baked/ microwaved tacos. Drizzle with mayo of choice.

step 7

  • STEP 7.7 serve immediately.
