  • 1 teaspoon Kashmiri chili powder or/4 cayenne mixed with 3/4 paprika
  • 1 teaspoon Kasoor methi -dried fenugreek leaves
  • 1/2 teaspoon Tandoori masala
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Coarse black pepper -butcher's grind works well
  • 3 tablespoon Oil
  • 2 inch Cassia bark or cinnamon stick
  • 1 Black cardamom pod or 2-3 green cardamom pods
  • 1 Bay leaf
  • 2 tablespoon Onions or shallots minced
  • 1 tablespoon Garlic ginger paste -recipe link below
  • 1.50 tablespoon Tomato paste with enough water to dilute to the consistency of pasatta
  • 2 tablespoon Cilantro leaves and stems finely chopped
  • 15 ounce Curry base -recipe link below
  • 10-12 ounce Pre-cooked lamb -beef or chicken work as well
  • 1/2 teaspoon Sugar
