Briyani is a rice-based dish cooked with spices and chicken, mutton, egg, shrimp, fish and vegetables also. Biriyani comes from the persian word berya(n) which means fried or roasted. Today i am going to share easy way of making hydrabadi veg biriyani at home. The authentic hydrabadi biriyani was dum cooked with meat. The sources says veg biriyani was introduced for vegetarian workers for the nizam's of hydrabad. This recipe contains mace, nutmeg, green and black cardamom, cinnamon, black pepper, saffron, cotiander, cumin and many more spices. We know the good.

  • 1/2 teaspoon Red chilly powder according to your taste
  • 1/2 stick Cinnamon
  • 1.50 Green cardamom
  • 2 Cloves
  • 1 Bay leaf
  • 1/4 teaspoon Whole jeera
  • 1/2 teaspoon garam masala powder
  • As required Salt
  • 1/4 teaspoon Sugar
  • 1 teaspoon Oil/ghee or clarified butter tablespoons+1
  • As required INGREDIENTS  FOR MAKING BIRIYANI  MASALA
  • 1/2 teaspoon cinnamon inch stick Green Cardamom 4 Black Cardamom 3 Cloves 5 Black Pepper 3 Star Anise 1 Nutmeg 1 Mace 1tsp Sha jeera 1   Coriander seeds 1 Kabab chini 1/2
  • As required Other ingredients
  • 1/4 cup Fried onions or Birista
  • 1/4 cup Chopped mint or pudina and coriander leaves
  • As required INGREDIENTS  FOR rice
  • 1 cup Basmati Rice washed and soaked for 15 minutes in water water 4cups
  • 1.50 stick Green cardamom Black cardamom 3 Cloves 4 Cinnamon 1" Star Anise 1
  • 1 teaspoon Oil
  • As required Salt
  • 1/2 pinch Saffron soak into 1 cup warm milk
  • 1 teaspoon rose water
  • 1.50-2 kewra essence drops
