Hydrabadi chicken biryani is one of the most popular forms of biryani in India. The chicken pieces are marinated and cooked alongside the rice, and it is seasoned with spices and saffron.
STEP 1.Add all marination ingredients(turmeric powder,chili powder, ginger garlic paste, yoghurt, salt, garam masala and fried onions) in the chicken and marinate in refrigerator for at least 1 to 2 hours.
STEP 2.For chicken, Heat oil in a wok and put whole spices.
STEP 3.Add marinated chicken and cook on low heat for 10 minutes.
STEP 4.Add biryani masala and 1/2 tsp salt, mix well and cook again for 5 minutes.
STEP 5.For rice, heat 1 tsp ghee in a pan and put whole masalas.
STEP 6.Add washed rice, salt, lemon pieces and cook rice till 75% done.
STEP 7.For biryani, put half of cooked chicken in a pot and add half of coooked rice.
STEP 8.Add remaining chicken with gravy and sprinkle half of fried onions, coriander leaves, saffron milk and kewda.
STEP 9.Put remaining rice over it, topped with fried onions, coriander leaves, fried raisins, saffron milk and kewda.
STEP 10.Cover tightly the pot, put it on iron tawa and give dum for 10 minutes on low flame.
STEP 11.Biryani is ready to serve, enjoy it with raita and salad.
