A spicy snack of dried anchovies fried with a variety of spices and different types of chillies. It is fried in blended paste which includes ginger, garlic, green and red chillies.
Ingredients for Hunan Style Spicy Anchovies Recipe
As required Ingredients to blend
1 inch ginger roughly chopped
15 garlic cloves
5 No.s red chillies fresh chopped roughly
2 No.s green chillies roughly chopped
As required Ingredients for frying anchovies
0.33 cup Oil
1 stick Cinnamon piece
2 No.s Star anise
2 No.s Bay leaf
1 No.s Black cardamom
8 No.s Dry red chillies
3 tablespoon Fermented black beans
150 gram Dried anchovies
1.50 tablespoon Chinese cooking wine

step 1
STEP 1.In a food processor add 1 inch roughly chopped ginger, 10 to 15 cloves garlic, 5 fresh red chillies ( or as per taste) chopped roughly, 2 green chillies roughly chopped. Blend till finely minced. Do not make a paste. Keep aside.
step 2
STEP 1.Place a wok on the heat and add ⅓ cup of oil,1 cinnamon stick broken, 2 star anise ,2 bay leaf, 1 black cardamom, 5 to 8 dry red chillies, and the blended ginger-garlic-chilli mixture,3 tbsp of fermented black beans roughly chopped. Stir fry and mix well till the oil turns to a light yellow colour.

STEP 1.Then add1 tbsp fermented soybean paste and mix well till the soy bean paste is well incorporated,

STEP 1.Next add 150 gms dried anchovies and cook on medium low heat for 4 to5 minutes till cooked through and stir well to ensure that the spices are well combined.

STEP 1.Add 1 ½ tbsp Chinese cooking wine and keep stirring for 15 seconds. Turn off the heat.
