  • 1/4 teaspoon Mustard Seeds
  • 0.13 teaspoon Fenugreek Seeds

  • 1/2 tablespoon Red Chili Powder
  • 0.13 teaspoon Turmeric Powder

  • STEP 1.Wash and dry the brinjals, then cut them into small pieces.
  • STEP 2.Heat oil in a pan and fry the brinjal pieces until they turn golden brown.
  • STEP 3.In a separate pan, heat oil and add mustard seeds, fenugreek seeds, and asafoetida. Fry until the seeds crackle.
  • STEP 4.Add red chili powder, turmeric powder, and salt to the pan and mix well.
  • STEP 5.Add the fried brinjal pieces to the pan and mix them with the spice mixture.
  • STEP 6.Pour vinegar into the pan and cook the pickle on low heat for 10-15 minutes.
  • STEP 7.Allow the pickle to cool down completely before transferring it to a sterilized jar.
