STEP 1.in a mixing bowl add 300 gm beef fillet cut into thin slices, 1 tsp brown sugar, ½ tsp rice wine, ½ tsp light soy sauce, 1 egg white, 1 tsp corn flour and mix well. Leave to marinate for 30 minutes.
STEP 1. in a bowl add 1 tsp brown sugar, 1 tsp oyster sauce, 2 tsp hoisin sauce, ½ tsp dark soy sauce, 1 tsp sesame oil, ½ tsp coarse black pepper, 3 tsp beef or chicken stock and mix well to combine all the ingredients well.
STEP 2.in a wok heat 1 tsp oil in high heat, add the marinated beef and stir fry for 2 minutes. then 5 gm finely chopped ginger ,3 cloves finely chopped garlic, white part of 5 spring onions cut into 1 inch lengths and stir fry for a few seconds.
STEP 3.add ½ a sliced red pepper and stir fry for 1 minute. to this add the prepared sauce mixture and stir fry for 1 minute.
STEP 4.then add the green part of 5 spring onions cut into 1 inch pieces and stir fry for 10 seconds. Turn off the heat.
transfer to a dish and serve hot.
