This recipe was inspired by mother's bolognese that she cooks over several hours and serves up with fried eggplant on top. I created a quick cook version that has more veggies cooked into it, as a way to get my almost three year old daughter to eat more veggies. My one year old daughter also loves it and i just scoop a bit out for her before i add in extra salt.
