  • 1/5 nos (). For Chole (Chickpea Curry) -
  • 1/5 cup dried chickpeas (chole)
  • As required soaked overnight
  • 0.40 nos medium onions
  • As required finely chopped
  • 0.40 nos Tomatoes
  • As required pureed
  • 0.40 nos green chilies
  • As required slit lengthwise
  • 0.40 teaspoons Ginger-garlic paste
  • 1/5 teaspoon Cumin seeds
  • 1/5 teaspoon coriander powder
  • 1/20 teaspoon thturmeric powder
  • 1/5 teaspoon red chili powder
  • 1/5 teaspoon garam masala
  • 1/5 teaspoon amchur (dried mango) powder
  • As required salt to taste
  • 0.40 tablespoons Oil
  • As required Fresh coriander leaves for garnishing
  • 0.40 nos () For Bhature (Fried Bread):
  • 0.40 cups all-purpose flour (maida)
  • 1/10 cup semolina (sooji)
  • 1/10 cup Yogurt (curd)
  • 1/5 teaspoon Sugar
  • 1/10 teaspoon Baking powder
  • 1/20 teaspoon baking soda
  • As required salt to taste
  • As required Water (as needed) for kneading
  • As required Oil for deep frying

Directions: Heavenly Chole Bhature Recipe

  • STEP 1.(1) For Chole - Rinse the soaked chickpeas and pressure cook them with 4 cups of water and a pinch of salt until they are tender (about 4-5 whistles). Drain and set aside.
  • STEP 2.In a large pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  • STEP 3.Add ginger-garlic paste and green chilies. Cook for a minute. Add tomato puree and cook until the oil separates from the masala.
  • STEP 4.Now add coriander powder, turmeric powder, red chili powder, and salt and mix well. Add the cooked chickpeas (chole) and mix them with the masala. Add water as needed to adjust the consistency.
  • STEP 5.Cover the pan and simmer for 15-20 minutes, allowing the flavors to blend together. Stir occasionally. Add garam masala and amchur powder. Mix well and cook for an additional 2 minutes.
  • STEP 6.Garnish with fresh coriander leaves and keep the chole aside.
  • STEP 7.(2) For Bhature - In a mixing bowl, combine all-purpose flour, semolina, sugar, baking powder, baking soda, and salt. Add yogurt and mix well. Gradually add water and knead into a soft and smooth dough.
  • STEP 8.Cover the dough and let it rest for at least 2 hours. Divide the dough into small portions and roll them into oval or round-shaped bhature.
  • STEP 9.Heat oil in a deep pan for frying. Once the oil is hot, deep fry the bhature until they puff up and turn golden brown on both sides. Drain the excess oil on paper towels.
  • STEP 10.Serve the hot and fluffy bhature with the prepared chole (chickpea curry). Enjoy the delicious Punjabi-style Chole Bhature with some onion, lemon, pickle and bundi raita on the side.
