  • 1/2 teaspoon Olive oil
  • 1/4 Brown onion, finely chopped
  • 1/2 Carrots, peeled, chopped
  • 1/2 stick Celery trimmed, chopped
  • 1/2 Garlic Cloves, Crushed
  • 1/4 teaspoon Fennel seeds
  • pinch Dried chilli flakes
  • 100 gram Can Crushed Tomatoes
  • 100 gram Can coles cannellini beans, drained, rinsed
  • 1/4 liter Massel vegetable liquid stock
  • As required Bouquet garni
  • 50 gram Cavalo nero, stem removed, leaves shredded
  • 1/2 Thick slices italian bread, lightly toasted, torn into chunks
  • 10 gram Finely grated parmesan, plus extra shaved, to serve
  • 1/4 Lemon, juiced, zested
