Pan fried wholesome bottle gourd (lauki) kofta in a tomato based gravy. simple, healthy bottle guard recipe or lauki recipe prepared from deep fried grated bottle gourd with tomato and onion based sauce. this is an ideal curry and and best alternative to traditional malai kofta curry and can be easily served with roti or chapathi. but certainly the kofta curry recipe would be good alternative which is tasty yet healthy and nutritious. basically, bottle guard is grated and mixed with dry spices and later deep fried to prepare the koftas.

Ingredients for Healthy Lauki Kofta Curry Recipe

  • As required Ingredients for Koftas
  • 1 No.s Bottle Gourd
  • 1 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • 2 teaspoon Coriander powder
  • 1 teaspoon Garam masala powder
  • 2 teaspoon Salt
  • 1/4 cup Gram flour
  • As required Oil For Frying
  • As required Ingredients for gravy
  • 8 No.s Tomatoes
  • 1 tablespoon Ghee
  • 1 inch Ginger
  • 4 Garlic Cloves
  • 1 No.s Onion
  • 1 No.s Green Chillies
  • 1 stick Cinnamon piece
  • 1 No.s Bay leaf
  • 2 No.s Black cardamom
  • 1 tablespoon Stone flower
  • 1 teaspoon Red chilly powder
  • 1 tablespoon Honey
  • As required Coriander

Directions: Healthy Lauki Kofta Curry Recipe

step 1

  • STEP 1.To make the lauki kofta, grate 1 whole peeled lauki. Squeeze out the excess water and keep it aside for later.

  • STEP 1.To the grated lauki add ½ tsp turmeric, 1 tsp coriander powder, ½ tsp red chilli powder, ½ tsp garam masala powder, 1 tsp salt and ¼ cup gram flour (besan).

  • STEP 1.Mix all the ingredients together well. Once the ingredients are mixed do not let them stand for too long as the salt will cause the lauki to release a lot of water

  • STEP 1.While mixing the ingredients, put the paniyaram pan on the heat. Add a little oil in the cavities.

  • STEP 1.Shape balls with the lauki mixture and place them directly in the cavities of the paniyaram pan.

  • STEP 1.Fry on medium heat for 4 to 5 minutes, gently flipping over the balls to ensure that they brown evenly.

  • STEP 1.To make the gravy, puree 8 tomatoes along with the water from the squeezed aluki and any leftover ungrated bits of the vegetable in the tall jar of the grinder.

  • STEP 1.In a hot pan, add 1 tbsp ghee, 1 inch ginger chopped, 4 cloves of garlic chopped, 1 slit green chilly, 1 large onion chopped, 1 inch cinnamon stick broken, 1 torn bayleaf, 2 big elaichi, 1 tbsp stone flower (optional).

  • STEP 1.Saute till the onions turn soft and begin to change colour do not brown or caramelise the onion completely.

  • STEP 1.Then add the tomato puree along with ½ tsp turmeric powder, 1 tsp coriander powder, ½ tsp garam masala powder, salt to taste, 1 tbsp honey. Mix together well and cover the pan and turn the heat to simmer.

  • STEP 1.After simmering for 5 to 7 minutes the gravy will be cooked. Check for salt. turn off the heat.

step 13

  • STEP 1.Add the koftas to the gravy just before serving. Garnish with chopped coriander.
