  • STEP 1.Wash and peel the tinda, then cut them into halves.
  • STEP 2.In a blender, blend spinach, green chilies, ginger, and garlic to make a smooth paste.
  • STEP 3.Heat oil in a pan and add cumin seeds. Once they splutter, add the spinach paste and cook for a few minutes.
  • STEP 4.Add yogurt, turmeric powder, coriander powder, and salt. Mix well and cook for another 5 minutes.
  • STEP 5.Add the tinda halves to the gravy and simmer until they are cooked through.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with roti or rice.
