A crunchy Gujarati healthy meal prepared from rice and pulses batter. The batter is fermented overnight mixed along with veggies and spices. Roasted on tawa and served wih chutney or ketchup.
STEP 1.Take 2 cups of rice in a bowl, add a cup of chana dal, toor dal, arhar dal as well. Now mix well and wash using water.
STEP 2.Take a spoon of fenugreek seeds and soak it in water and keep aside.
STEP 3.Grind all the pulses and rice finely. Add a spoon of curd, and the soaked fenugreek seeds. Make a fine grind. Transfer the batter into a bowl. Leave it overnight for fermentation.
STEP 4.Now add a cup of sliced carrots, ginger garlic paste, red chilli powder, turmeric powder, asafoetida and salt. Mix well. Make sure the batter is thick. Add cooking soda. mix well.
STEP 5.Take a wok, add 3 tablespoons if oil in it and spread it, add mustard seeds, sesame seeds and curry leaves and cook. After saute add the batter into the shape of a cake. Spread it evenly. Cook for 5 minutes and cover the lid. Cook equally on both sides.
STEP 6. Keep adding oil as needed. Cook from both sides.
STEP 7.The handvo is ready to serve.
