STEP 2.Add one cup maida , 2 tsp hot ghee and little salt in a bowl mix for few minutes, then add water little by little and knead thoroughly to make a soft and stiff dough. Keep it for 30 minutes.
STEP 3.Filling :
STEP 4.Dry roast 2 cup grated coconut into golden brown colour. Dry roast 1/4 cup peanuts, 2 tbs sesame seeds, 1 tbs roasted chana dal ( chutney dal ). Roast few cashew, badam, walnut , pista and crush the nuts. Transfer all roasted ingredients in a bowl. Let them cool. Grind all with 1/2 cup grated jaggery into slightly coarse powder. Add the nuts and 1/ 2 tsp cardamom powder and mix well
STEP 5.Method :
STEP 6.Take a small ball from the dough dust it with dry flour and roll it into a round thin sheet. Put the filling in the centre and apply water to the half round edge. Fold it and seal the edges properly or put the round sheet in a mould put the filling and close the mould and press it then open the mould and replace the gujiya in a plate.
STEP 7.Heat oil in a pan fry the gujiya in medium flame turn slowly after few minutes, fry it into golden colour and crispy.
