A popular Gujarati snack made from khaman dhokla in a sweet spicy tangy tempering, crumbled and combined with pomegranate, grated coconut, sev and a sesame tempering (tadka).
As required Ingredients for khaman dhokla tempering
2 teaspoon Oil
1 teaspoon Mustard seeds
1 teaspoon Cumin seeds
4 No.s Green chillies slit
1 sprig Curry leaves torn
2 tablespoon Sugar
2 tablespoon Lemon juice
1/4 teaspoon Salt

1 teaspoon Sesame
2 No.s Green chill slit
1 sprig curry leaf torn

1/4 cup Coconut freshly grated
1/4 cup Coriander leaves chopped
1/4 cup Pomegranate seeds
1/4 cup Sev
Directions: Gujarati Sev Khamani Recipe
step 1
STEP 1.In a small blending jar add 1 inch ginger chopped, 2 green chillies chopped, 2 tbsp water and blend to make a paste.

STEP 1.In a mixing bowl add 1 ½ cup besan (gram flour), 1 tsp sugar ¼ tsp baking soda, 1 tsp enos fruit salt, salt to taste. Mix.

STEP 1.Then add the green chilli ginger mixture and ½ cup water. Whisk till all the ingredients are fluffy and there are no lumps.

STEP 1.Grease a dhokla pan with oil applying it all over the inside of the pan.

STEP 1.Add 1 tbsp oil and 1 tbsp lemon juice in the batter and whisk till well combined. Steam soon after adding the lemon juice.

STEP 1.Pour the dhokla mixture into the pan and place it in the steamer . Steam on high heat for 10 to 12 minutes. Check if done by inserting a knife in the dhokla, if ready, it will come out clean.

STEP 1.For khaman dhokla tadka, add 1 tsp oil in a preheated pan, 1 tsp mustard seeds, 1 tsp cumin seeds, 4 slit green chillies, 1 sprig torn curry leaves. Stir andallow the seeds to crackle and the green chillies to roast.

STEP 1.Next add ½ cup water, 2 tbsp sugar, 2 tbsp lemon juice, 1/4 tsp salt. Mix till the sugar dissolves.

STEP 1.Once dhokla has cooled in the pan, cut into diamond shapes or squares.

STEP 1.Pour the sweet tangy tadka over the dhokla pieces.

STEP 1.For the sev khamani tempering, in a preheated pan add 1 tsp oil, 1 tsp sesame seeds, 2 green chillies slit, 1 sprig curry leaf torn.stir and allow sesame seeds to crackle.

STEP 1.To assemble the sev khamani, ina large dish crumble the khaman dhokla, ¼ cup chopped coriander leaves, ¼ cup fresh grated coconut, ¼ cup pomegranate seeds, the sesame tempering (tadka), ¼ cup sev. Toss it all together to combine flavours.

STEP 1.Sev khamani is ready. Serve garnished with more sev.
